1. When Was It Roasted?

This is the most important question you can ask, and most big brands will either bury the answer in fine print or not tell you at all. Coffee is at its best within 2–4 weeks of roasting. After that, flavor compounds begin to break down. A “best by” date three months from now tells you nothing useful.

A good coffee subscription should be able to tell you exactly when your coffee was roasted. If they can’t — or won’t — that’s your answer.

2. Can You Actually Customize It?

Your mornings are your own. Maybe you want a dark roast on weekdays and a light roast on weekends. Maybe you drink a lot and need more than a standard bag.
